I did some remodeling for a family a while back. They had a little plaque in the kitchen with this written on it.

We used to get sow belly or fresh side pork as we called it then. I loved the stuff.

Wife and I were at Costco a week or so ago and they had fresh side pork there. I wanted some but it was very expensive. Like twice the price of their bacon.  You wonder why as it doesn't need any processing/curing, etc.

We didn't buy any. ;(
